Many teens have no time to eat a healthy breakfast in the morning. If this a phenomenon that occurs regularly for you, perhaps these breakfast bars are just what you’ve been looking for. This recipe takes around 45 minutes in total and results in absolutely delicious breakfast bars. In a rush, grabbing one or two breakfast bars and eating them on the way to school should tide you over until lunchtime.
What you will need:
2 ¼ cups old fashioned oatmeal
2 ¼ cups flour
1 ½ cups packed brown sugar
2 sticks of butter
1 ½ tsp. baking soda
½ tsp. salt
3 cups fresh or frozen blueberries
¼ cups sugar
1 Tbsp. corn starch
How to make the breakfast bars:
Preheat oven to 350 degrees.
In a mixing bowl, combine the flour, brown sugar, baking soda and salt. Melt the butter for about a minute in a microwave and pour over the oatmeal mixture. Mix until crumbly.
Press about two thirds of the oatmeal mixture into a 9×13 inch pan. Save the rest for the topping.
In another mixing bowl, combine the blueberries, sugar and cornstarch. Mix until the blueberries are evenly coated in the sugar and cornstarch.
Pour the blueberry mixture over the bottom crust in the pan and crumble the remaining oatmeal mixture over the blueberries.
Bake for 20-25 minutes or until golden brown.
Remove from the oven and let cool completely before cutting.
